What I Ate This Week #14

Lots of pasta this week but I've been enjoying the wholewheat version. I think I'll try and eat more of that and only white occasionally.

I bloomin' love pasta bake. You've gotta make the top crispy, get some bread crumbs on there! This was a random mix of wholewheat and white pasta. 

Pancake day, woohoo! I had honey and blueberries (picked by me in Norfolk last Summer). I tried to center the pancake to make a lovely picture buuut it wasn't happening #bloggerproblems.

Mushroom and pepper risotto. This time with Italian herbs, usually I chuck plenty of smoked paprika in a risotto but not this time.

A Linda McCartney mozzarella burger with garlic mayo and beetroot salad, tomatoes and spiced wedges. A girl needs a burger sometimes, just sometimes.

Big old vegetable lasagna. Made using frozen mixed veg, lasagna sheets and cheese sauce.
I could eat the top forever as I'm not super keen on the mixed veg (sweetcorn is not my friend).

Both my brothers are home, all of us are 6ft and above so want hefty portions! 
Garlic, chilli and chickpea pasta with savoy cabbage. 
I wolfed this down. One of my favorite ever meals.

Homemade Yorkshire puddings, broccoli, potatoes, goats cheese and red onion tart and Chantilly carrots.

What I Ate This Week #13

Sorry it's a day or two late. I've been busy painting! A mixed bag this week.

My boyfriend made dinner for me, we were meant to have this the evening before with the sushi and vegetable tempura but we were too full! This was the hottest stir fry I have ever eaten. I could barely eat it, my mouth turned numb! He did put three fresh chillis in it and a black bean sauce. Blew. My. Head. Off.

This cauliflower cheese will change your life. Okay it won't but it is the best cauli cheese I've ever had! Roasting cauliflower is the way forward. I use this recipe

I had chips becaaaause I wanted to have chips and I rarely have them! I always want a potato special but they are always piled on top of sausages and I don't really fancy a meat tainted one, a cheese and onion pie sufficed.

Paprika vegetable stew with brown nice. This has roasted peppers, carrots, onion, mushroom and parsnip in a tomatoy papriky (totally real words) sauce. Yum.

You know when you've got little bits of pasta left over in bags, not enough for a meal? Well use them up in a big old pasta bake. The chilli penne was amazing in it!

American pancakes made for me on Valentines Day by my boyfriend. Topped with strawberries, raspberries, blueberries and plenty of maple syrup. 

If you can't have pizza on a weekend, then when can you have it?! This is my favourite frozen pizza, Chicago Town Takeaway Four Cheese MeltA God in the pizza world I tell you. Also, pizza doesn't really photograph well buuut we all know what pizza looks like.


Went slightly overboard with the leek sauce today. A nut cutlet (bit dry), mash, savoy cabbage and carrots.

What I Ate This Week #12

Let's just first start of the week by appreciating the goodness that is - these homemade coconut macaroons and chocolate chip cookies. Yes. Let's take a moment.
Ah.


Yeah being a vegetarian doesn't mean you have to eat healthy food all the time!

A favourite, savoy cabbage, garlic, onion and chickpea pasta. I can eat a bucket of this stuff.

The baked potatoes mixed with egg yolk and cheese, popped under a grill are something I used to eat a lot when I was little, it's good for you! (My Mum used to feed me mashed potato mixed with egg powder when I was a baby, it made me grow to a 6 foot tall adult!) Some beanie nugget things from Morrisons and broad beans. I've got a lot of love for broad beans.

Naughty Dominoes takeaway pizza. Veg Supreme minus the sweetcorn and nachos with jalapenos. *shrugs*

There were egg yolks left over from making coconut macaroons hence using them up mixed in a baked potato. Green beans, cauliflower, carrots and a Linda McCartney cheese, leek and red onion plait.

Went to the Spread Eagle for lunch after picking my boyfriend up from work. The vegetarian option was nothing to shout about, I got a broccoli and cheese bake thing (really soggy) and some veg. The roast potatoes were rock hard and the Yorkshire pudding very chewy. I always ask what they have been cooked in hoping it's vegetarian friendly! 

My boyfriend and I had a go at making veggie sushi and vegetable tempura and it turned out really well. I am actually quite good at rolling sushi it appears (the trick is to really squash down when you roll so it holds together). I made avocado and carrot, cucumber and cream cheese, carrot and cream cheese; and pepper and cucumber. They were delicious. We used this kit and it was really easy. 

The vegetable tempura batter was far too thin using this from Sainsbury's. If you try it, don't put all the liquid in at once, add about two thirds and go from there. As you can see we tested the batter mix with a broccoli and it just ran off entirely! We had to add some flour to thicken it up. We battered broccoli, sweet potato, onion rings, carrot, spring onions and avocado. Unfortunately my hair smelt like a deep fat fryer afterwards but that was the price I paid for tasty food!

What I Ate This Week #11

Hello! Starting WIATW back up again as I think it's good to show that vegetarians don't just eat salad, they eat tonnes of different things (my diet does admittedly contain a lot of rice and pasta, pretty samey but nevermind).

Started off the week at my favourite vegetarian cafe, Topaz. I have never once been disappointed there, the food is amazing quality, lots of herbs and veg is grown in their own allotment, it supports a local charity, it is reasonably priced (you get a hefty portion for your money) and it is SO TASTY! I had a lentil curry with raita, rice and a freshly made chapati. 

I love the colour of butternut squash curry, such a beautiful orange! I was obviously feeling the love for lentils at the start of this week. Butternut squash curry is a staple in my house, we have it with naan bread and padadums. 

Smoked paprika, tomato and pepper sauce with chilli penne pasta. I've never had chilli pasta before (this one is from Sainsbury's). It had a subtle chilli taste and was something a bit different, it enhanced the sauce and was pretty tasty!

So this was meant to be roasted butternut squash and garlic risotto with cannellini beans but I didn't have those in so I used black eyed beans instead. Bit strange but it was alright. This risotto is rather time consuming roasting all the veg and having to cook it for a while but it is worth it. I could have roasted the squash for longer to blacken it a little but it was nice and soft as it was. It contains a fair amount of garlic and I definitely would have warded off any vampires the next day!

I love homemade mixed bean enchiladas. So easy, filling and yummy. This is kinda a lazy meal but my boyfriend and I love it, usually I can eat a bigger portion than him of this stuff! We had it with potato wedges and onion rings, naughty.

Well would you take a look at those Yorkshire puddings! Er HELLO, best thing ever! My Mum made them using this Brian Turner recipe (minus the beef dripping). Carrots, broccoli, cauliflower, mash and a Quorn cheese and broccoli grill.
